Easy Chicken Mozzarella Bake, from Claudia


2 cups hot water
1 cup Uncle Ben's Converted brand rice
14 1/2 ounces Del Monte Cut Diced Tomatoes
1 envelope onion soup mix
1/4 teaspoon black pepper
1 broiler-fryer chicken -- cut up
2 cups mozzarella cheese -- shredded


Preheat oven to 375.


In a baking dish combine water, rice, tomatoes, soup mix and pepper. Mix well. Place chicken into the rice mixture, cover tightly with foil and bake for 45 minutes. Remove foil, sprinkle cheese on top and bake for 15 more minutes.
