Girl Scout Thin Mint Cookies, from Gael


1 box Duncan Hines Devil's Food Cake Mix
2 eggs
2 tablespoons water
2 tablespoons cooking oil
1/2 cup cocoa
1 package chocolate chips -- I like Ghirardelli Double Chocolate
2 drops mint flavoring, up to 3 drops

Preheat oven to 400. Combine cake mix, eggs, water, cooking oil, and cocoa. Blend this well, will be a sticky mess. Let stand 10 minutes, and then shape into small ½-inch balls. Place on a cookie sheet 2 inches apart, and smash down flat with large spoon sprayed with Pam. Bake for about 8 minutes. Let cool until they reach room temperature.

Heat chocolate chips in the microwave, or in a double boiler. When completely melted add a couple drops mint flavoring. Careful not to add too much, it is powerful. Spread the melted chocolate on the cookies, or dip the cookies into the chocolate.
