Kentucky Buttermilk Biscuits, from Gael


Light and fluffy, similar to KFC biscuits, and so easy to make. I have to remember to buy buttermilk for these since I rarely have it. You can buy dried buttermilk which is easier to keep on hand, just whip up the amount you want when ready to make these. Or you can take ¾ c of milk and add a teaspoon of vinegar, then wait 5 minutes and use the soured milk in place of the buttermilk.

2 c flour
2 ½ t baking powder
½ t baking soda
¼ t salt
1 T white sugar
½ c salted butter
¾ c buttermilk

Preheat oven to 400. Mix flour, baking powder, baking soda, salt and sugar in a bowl. Cut in ½ c butter until the mixture resembles coarse crumbs. Mix in the buttermilk. Turn out onto a lightly floured surface and knead 2 minutes. Transfer onto ungreased baking sheet, roll into a 6 x 6 inch square, and cut into 12 even sections but do not separate.
Let sit 10-15 minutes before baking so they raise a little. Brush tops with melted butter. Bake 15 minutes or until knife inserted in center of square comes out clean. Separate into biscuits and serve hot.
