No Peek Cookies, from Erin

Erin says: “My mom always made these for me when I had to bring a snack to school. They kind of look and feel like Styrofoam, but taste great!”

2 egg whites, room temp, put in mixer but do not beat until you add1/8 t cream of tartar
Now beat mixture STIFF

Then fold in:
¾ c sugar
1 shake of salt
Few drops of your favorite food coloring
1 c mint chocolate chips

Preheat oven to 375. Grease cookie sheets and drop by teaspoons. Put into oven and turn oven off! DO NOT open or peek until morning!
