Portabella Mushroom Fajitas, from Gael No meat needed! These are DELICIOUS! We made them first on 2-20-11 and immediately declared they belonged in our regular recipe rotation!
1/2 onion, sliced
1 yellow bell pepper (any color OK), sliced, stemmed, seeded
sliced portabella mushrooms (about 2)
2 T fajita or taco seasoning
Fajita/taco toppings as desired--sour cream, guac, salsa, hot sauce, cheese
In pan over medium-high heat, sauté onion and yellow bell pepper in olive oil until onion has lightly caramelized. Transfer sautéed vegetables to bowl.
Place mushrooms in same pan and cook until tender. Drain liquid from pan and add mushrooms to bowl.
Toss vegetables with fajita seasoning mix. Assemble fajitas
