Chicken Hot Dish, from Anne

Mom writes: This is very good. You could add asparagus or broccoli I think also. 8-19-90.

Cut uncooked chicken breasts into good-sized chunks. Put in 9 x 13 pan.

Mix 2 cans cream of mushroom soup, 2 cups sour cream, 1/2-1 package onion soup mix.

Combine above and spread on chicken. Bake 10-15 minutes. Stir and then bake again, for about 45 minutes total baking time at 350.

Wild-Rice Hot Dish, from Anne


Anne got this recipe from the St. Paul paper, and says she used Uncle Ben's wild and long-grain rice. Her only other note: "Good!"


1 pound hamburger
1/4 pound bacon -- cut into 1" pieces
1/2 cup celery – chopped
1/3 cup onion -- chopped
1/2 cup wild rice -- soaked overnight
1 can cream of mushroom soup
1 can cream of celery soup
4 ounces mushrooms -- drained
1 cup milk


Sauté hamburger, bacon, celery and onion about 10 minutes or until hamburger is browned. Add rice, soups, mushrooms and milk. Pour in greased 2-quart casserole and bake at 350 for 1 hour.

7 ounces macaroni – uncooked
2 cups milk
1 can cream of mushroom soup
1 can cream of celery soup
1 can mushrooms
2 cups chicken – diced
1 small onion – chopped
1/2 pound cheese -- diced


Mix all in large, long, flat casserole and refrigerate overnight. Remove from fridge and mix well. Top with bread crumbs or potato chips. Bake one hour at 350.

HINTS: Kathy used 2 c of turkey which she bought already diced in frozen foods section by Land O' Lakes. She used Schilling's Instant Chopped Onion. She used one package His Nibs Shredded Cheddar Cheese. For topping, she substituted crunched-up chow mein noodles.

1 1/2 pounds hamburger or ground turkey (Can substitute 1 lb hamburger and 1/2 pound Johnsonville Italian sausage.)
onion -- chopped
salt, pepper, Italian seasoning, garlic salt to taste
15 ounces Prego spaghetti sauce
1/2 cup water
8 ounces egg noodles
1 can cheddar cheese soup



Brown meat and onion, add seasonings. Add Prego sauce and water, simmer. Cook noodles and add cheddar cheese soup. Place half of meat mixture in 9 x 13 pan. Add noodle mixture. Add rest of meat. Top with mozzarella cheese. Bake at 350 for 45 minutes.

1 1/2 pounds hamburger
1 onion – chopped, 1 cup celery -- chopped
3 cups water
1/2 cup rice (regular or instant)
1 can cream of chicken soup, 1 can cream of mushroom soup
chow mein noodles


Brown hamburger and onion. Drain. Add celery, water, rice and soups. Mix well. Put in 1 1/2 quart dish.Bake at 350 for 1 hour uncovered. Cover and continue baking for 15 more minutes. Add noodles on top in the last 15 minutes or serve by spooning it over the noodles.


Bernell's Pork Hot Dish

Mom says: “Watch so it does not dry out”


2 pounds pork steak or roast -- cube and brown
2 onions – chopped, 3 c celery – chopped, 1 green pepper -- chopped
1 can mushrooms
1 jar chopped pimento
1 can cream of mushroom soup, 1 can cream of chicken soup
1 tablespoon sugar
1/3 cup soy sauce
1 package large pasta shells


Preheat oven to 350. Add a little water to pork and onions and simmer on stove until tender. Mix all ingredients together. Bake 1 hour covered; then 15 minutes uncovered.
