Waffles, from Carl

Carl’s waffles are legendary. Clio says: “He has been making them for a crowd on New Year's Day since 1984. The gathering starts at noon and goes until the last person is fed. We've never run out of waffles, sausages or OJ and we've had anywhere between 40-60 people show up!”


2 cups flour
2 T sugar
1 T baking powder
1 t salt2 eggs separated
1/3 c oil
1 3/4 c milk


Sift together dry ingredients into bowl. Combine slightly beaten egg yolks, oil and milk. Add to dry ingredients all at once; beat until smooth. Beat egg whites until soft peaks form then fold into batter. Bake in preheated waffle iron at medium heat until steam stops and waffle is golden brown about 5-8 minutes.
